125g butter, softened

1 cup sugar

1 egg

1 1/2 cups plain flour

1/2 cup Uncle Joe’s Walnut Flour

1 teaspoon baking powder

pinch salt

1/2 cup chopped Uncle Joe’s Walnuts, lightly toasted

20-24 Uncle Joe’s Walnut Halves or pieces for topping


Preheat oven to 180°C bake. Line a large oven tray with baking paper.

Cream the butter and sugar until light and fluffy. Add the egg and beat well. Sift the two flours, baking powder and salt together. Mix into the creamed mixture. Add the toasted walnut pieces and mix well. 

Roll tablespoonfuls of mixture into 3cm balls. Place on the oven tray. Flatten with a fork. Top each with a walnut half or piece.

Bake for 15 minutes, or until cooked. Makes 20-24 cookies.
