CHEESY KIWIFRUIT SEED FLOUR BREAD

1/4 cup Uncle Joe’s Kiwifruit Seed Flour

1 3/4 cups self-raising flour

pinch salt

1 cup grated tasty cheddar cheese

1/4 grated parmesan cheese

2 teaspoons each: dried oregano, basil

1 large shallot, diced

2 eggs, lightly beaten

1/4 cup Uncle Joes Walnut oil or olive oil

1 1/2 cups milk

Topping: 1/2 cup grated tasty cheddar cheese

Preheat the oven to 200°C. Spray a 23cm x 13cm loaf pan with oil.  

 

Sift the two flours and salt into a large bowl. Add the cheeses, herbs and shallot.  

Combine the eggs, oil and milk. Make a well in the centre of the dry ingredients and pour in the liquid mixture. Stir until just combined.

Pour into the loaf pan. Bake for 45 minutes or until a skewer inserted in the centre comes out clean.  

 

Slice and serve warm or at room temperature.
