APPLE & BLACKCURRANT SEED FLOUR MUFFINS

To make a chunky apple sauce: peel, core and dice 2 medium Granny Smith apples. Place in a bowl with 1-2 tablespoons water. Cover and microwave for 2-3 minutes until softened. Mash the fruit coarsely.

2 large eggs

1/2 cup sugar

1/4 cup milk

100ml canola oil or Uncle Joes Walnut or Hazelnut oil

1 1/2 cups plain flour

1/4 cup Uncle Joe’s Blackcurrant Seed Flour

3 teaspoons baking powder

1 cup chunky apple sauce

Topping: 1/2 small Granny Smith apple, cored and thinly sliced

2-3 tablespoons honey, warmed 

 

Preheat the oven to 210°C. Lightly oil an 8-10 hole muffin pan or line with paper cases.  

Beat the eggs, sugar, milk and oil together in a bowl until well mixed.  

Sift the two flours and baking powder into a large bowl. Stir in the liquid mixture and apple sauce until just moistened.  

Spoon the mixture into the muffin holes to about 3/4 full. Top each with a slice of apple.  

 

Bake for about 18 minutes, until a skewer inserted in the muffins comes out clean. Brush with honey while still hot. Makes 8-10.
