Walnut & Carrot Cake

Ingredients

  • 250 gm grated carrots
  • 1 cup Uncle Joe's Walnut Oil
  • 1 cup lightly packed brown sugar
  • 3 eggs
  • 1 ½ cups self raising flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ¾ cup walnuts and currants or sultanas

Method

  • Using Food Processor place oil, sugar and eggs in bowl. Process until well combined.
  • Add flour, soda and cinnamon. Process until well mixed.
  • Remove mixture from bowl and combine with carrots and walnuts and currants.
  • Pour into 2 well greased 12cm x 17cm loaf pans or a deep 20cm square tin.
  • Bake in moderate oven, 160oC for 45 minutes or until cooked when tested.
  • When cool ice with cream cheese frosting.
