Ingredients

350 gm Uncle Joe’s Walnut Meal lightly toasted

5 eggs, separated

1 cup (200gm) castor sugar

¼ tsp vanilla extract

icing sugar for serving
Method

Preheat oven to 180oC degrees (160oC fan forced)

Grease 24cm non-stick springform pan. Line base with baking paper.

Beat egg yolks in a small bowl with an electric mixer until smooth.

Gradually add the sugar, beat for about 4 mins until mixture is thick and creamy.

Transfer mixture to a large bowl. Fold in walnut meal and vanilla.

In a clean medium bowl, beat the egg whites until firm peaks form.

Fold 1/3 of the egg white into walnut mixture, then add remaining egg white.

Spread mixture into the prepared pan and bake for 20mins.

Cool cake completely in oven with the door ajar.

Just before serving, dust cake with sifted icing sugar. Serve with cream or ice-cream

Suitable to freeze. Not suitable to microwave.
Use good quality walnuts. (Uncle Joe’s of course!)
