Orange & Hazelnut Cake

Ingredients

  • 150 gm dates
  • ½ cup orange juice
  • 1 whole orange, skin, pith, the lot (except pips)
  • 140 gm dark muscovado sugar
  • 2 eggs
  • 3 Tbsp Uncle Joe's Hazelnut Oil
  • 260 gm flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 100 gm Uncle Joe’s Hazelnut Meal
  • Orange zest (optional)
  • Cream or yoghurt to serve (goes very well with Greek yoghurt)

Method

  • Microwave dates and juice 2 minutes, or simmer on stove 1-2 minutes to soften
  • Cool
  • Cut up orange including skin etc and place in food processor and mince finely
  • Add date and orange mixture, oil, sugar, eggs and process
  • Sift flour, baking powder, baking soda in bowl and stir in hazelnuts
  • Add orange mixture, but don't overmix
  • Put in tin and bake
  • Cook at 180oC for 40 to 45 minutes in a 22cm ring tin, sprayed with oil and lined with baking paper.
  • Turn out and cool, serve.
