Hazelnut Shortbread


Makes about 16 biscuits

Ingredients

  • 150 gm Uncle Joe's Hazelnut Meal
  • 125 gm butter, softened
  • 50 gm icing sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 150 gm plain flour
  • 1 tsp baking powder

Method

  • Preheat the oven to 140oC (fanbake).
  • Line 2 baking trays with baking paper.
  • Beat the butter and icing sugar until pale and creamy, then add the egg yolk and vanilla and mix to combine.
  • Combine the flour, baking powder and hazelnut meal in a separate bowl, then gradually stir into the butter mixture.
  • On a lightly floured surface roll out the mixture to about 1cm thick and cut into 6 cm rounds.
  • Place on the prepared baking trays and cook in the preheated oven for 18-22 minutes or until lightly golden in colour.
  • Allow the biscuits to cool for about 5 minutes on the trays before transferring to a wire rack to cool completely.
