Makes about 16 biscuits
Ingredients

150 gm Uncle Joe's Hazelnut Meal

125 gm butter, softened

50 gm icing sugar

1 egg yolk
-
1 tsp vanilla extract

150 gm plain flour

1 tsp baking powder
Method

Preheat the oven to 140oC (fanbake).

Line 2 baking trays with baking paper.

Beat the butter and icing sugar until pale and creamy, then add the egg yolk and vanilla and mix to combine.

Combine the flour, baking powder and hazelnut meal in a separate bowl, then gradually stir into the butter mixture.

On a lightly floured surface roll out the mixture to about 1cm thick and cut into 6 cm rounds.

Place on the prepared baking trays and cook in the preheated oven for 18-22 minutes or until lightly golden in colour.

Allow the biscuits to cool for about 5 minutes on the trays before transferring to a wire rack to cool completely.
